A classic eggs benedict is made with ham or bacon on top of a toasted English muffin, but this one is a fusion with eggs florentine as it also has spinach in the mix, make it more of a fully rounded meal. Or switch out the bacon for smoked salmon and turn it into an eggs royale.
Swap out the cream for Greek yoghurt should you prefer, just make sure it is served in a tall glass. Melted white chocolate on top works wonderfully too. Omit the bacon if you wish, and, if you prefer not to use vino, there are great red wine stock pots available to cook with these days.
